Definition
Best practices are the science. Study them. Understand them. Know your food cost benchmarks, your labor targets, your turn times, your table mix. Know the standard service sequence. Know how the best operators in your segment handle Guest recovery, menu engineering, and shift management. That’s the science. It exists for a reason and you need to know it.
But the science doesn’t make you remarkable. It makes you competent. Competent is the floor, not the ceiling.
The art is yours. It’s the specific, identity-rooted decisions that only you can make — because they come from your values, your vision, your understanding of your Guest, and the particular thing you’re trying to build in the particular market you’re in. Nobody else has that combination. Which means nobody else can replicate what you build when you lead with it.
The operators who follow best practices and nothing else end up with commodity businesses. Interchangeable. Invisible. Competing on price because they have nothing else to compete on. The operators who do the science and then create their own art — those are the ones who build something that lasts.
Learn the rules. Then build something the rules don’t cover.
What Changes Tomorrow
Tomorrow, do the science first — run the best practice, follow the proven system, get to competence. But then ask where your own identity and judgment can turn that competence into something remarkable that no competitor can copy. Science gets you to the floor. Only your own art gets you to the ceiling.
