Explanation

Chasing calm at real volume is chasing a condition that peak-volume restaurant work will never actually deliver — the room is going to be loud, the ticket times are going to compress, the constraints are going to show up regardless of how well the operator has planned.

What [Productive Chaos] does instead is relocate the target from the environment to the cast. The operation doesn’t need the chaos to stop; it needs the cast calibrated well enough to perform inside the chaos without it degrading the Guest Experience.
