Which one a given engagement uses is a function of the work, not of convenience. Coaching runs well remotely, because the work is on your capability and your read, and that is conversation, material, and accountability. Consulting usually needs the building, at least at the start, because I am reading what your operation actually produces rather than what you describe.
Why Some Of It Has To Be In The Room #
Some signals do not survive a phone call. How the stage runs when a table goes wrong. Whether the kitchen manager is leading or just expediting. Where the cast looks when a decision is needed. How long a recovery takes and who owns it. You can tell me about all of that, and what you tell me will be honest and still incomplete, because you are inside it.
And if you run multiple units, I read all of them. I do not read two, extrapolate, and call it a system read. If you have twelve, I read twelve.

There is a third shape between the two. Fractional operations leadership — I hold a defined seat in your operation for a defined stretch, remote and onsite as the work requires, usually while the internal capacity that will eventually hold that seat is being built.
