The Second Fundamental. What the Guest Actually Buys.
Product is not the food. Product is the Guest Experience — every moment the Guest touches your operation, from the digital front door through the last goodbye. The food is one element inside it.
Get Product wrong and no amount of marketing, pricing, or hospitality talk fixes it. Get it right and every other fundamental compounds off a foundation the Guest can actually feel.
What Lives Here
Two books. Same 163 sections. Same arc.
Each section is a chapter — a focused teaching on one idea. The Book runs 163 sections. The Fieldbook runs the same 163, paired 1:1.
The Book — the teaching. What the Guest Experience is, how it's built, where operators default to service and lose hospitality.
The Fieldbook — the work. What to do this week against each section, in your building.
You read the Book to understand. You run the Fieldbook to change what the Guest is actually experiencing.
How to Use This
Start at 2010. Move in order. The arc runs from the pre-opening build through the GX, hospitality, the menu, the kitchen, delivery, technology, loyalty, marketing, and the standard that holds or drifts. Each section sets up the next.
Every Book section pairs 1:1 with a Fieldbook section carrying the same number. Read the Book section, then run the Fieldbook section against your own operation before moving on.
